  5. hey thanks for ur reply. I tried with coconut milk. my friend said it was very good. He asked to cook again. I changed the recipe little bit. what i did, after frying the onion and other spices, i put 1 and half cup coconut milk and after 5 mins add the fried eggplant :).

  6. Oh absolutely. It will be different recipe but will taste good. Just double check the kind of milk and see if it needs to be cooked or can be consumed otherwise.

  8. I guess you could but you'll have to boil the potatoes and then fry them (as if making aloo raita) or cut them in a thinly sliced way (just like baingan) and then add them in once they are fully cooked!

  16. Mustard Oil is a bit more flavorful..I hail from Punjab region of Northern India and it is used their quite often to cook vegetables. my mum always made dahi baingan, aloo baingan and aloo gobi in mustard oil…it lends a light smoky flavor to dishes..Canola Oil is fine for cooking this too..

  17. You're using MUSTARD Oil? How does this affect the taste — as opposed to using Canola oil?

  18. It wasn't watery. Many times if it's thicker, a little milk or water is added to get soupy consistency…it was well beaten home made plain yogurt..the kind used for Raita's..if you prefer thicker Raita's then you can use greek yogurt..
