1-2 cups boiled beans ( you can use the can ones too)
I simply soak uncooked/ raw beans in water overnight and pressure cook them.
Vegetables of your choice 1-2 cups ( In this recipe, I’ve used mushrooms, spinach, bell peppers)
1/2 green chilli
2-3 tbsp chopped cilantro leaves
Small piece of onion chopped
Salt per your taste
1 tsp red chilli powder
1/2 tsp asafoetida powder ( hing)
and 1/2 cup chickpea flour to bind everything together
and oil for pan frying the batter
Form a puree out of beans then Mix the above ingredients and form a batter. Then heat a skillet . When its hot, add oil and then cook the batter to get a tasty omelette.
Tip: If the batter is too think, you can add some water. If it is too thin, add a little bit more chickpea flour. Enjoy with a cup of tea or coffee.
